Every time you dine in a Korean restaurant, it’s common for the restaurant's "ajumma" (auntie) to quickly bring a variety of side dishes as soon as you sit down. After finishing your meal, you can even choose to have more, free of charge and without limits. While a simple plate of kimchi and a dish of cucumber may not sound like much, what's fascinating is that these side dishes often include substantial items like soy-braised beef, quail eggs, or even seafood marinated in sauce, which can rival the main dish in flavor and variety. Aren't they worried that diners will only eat rice with the side dishes, leading to a loss of revenue for the restaurant?
